In Japan, the custom is to serve pastries and desserts in a place dedicated to sweet dishes. Thus, we supported the transposition in Tokyo of the LIBERTE bakery-pastry concept. To accommodate this workshop-restaurant, a tailor-made building was built on a small plot, typical of Tokyo's average urban fabric. The execution to be carried out by a team of local architects and builders, we used our skills in 360° virtual reality to communicate our concept in a very realistic and precise way. Inside, the sales counter extends behind the glass that separates it from the preparation workshop in order to make the manufacturing process visible. In this place, the raw materials are proudly displayed. This scenography opens the laboratory to the sight of gourmets. The decor disappears to give way to the daily spectacle of the craftsmen, their gestures and their know-how.
